Snow Pea Sprouting Seed - also called Snow Pea Shoots.
Snow Pea Shoots are usually grown in trays or punnets in
soil, whereas the Snow Pea Sprouts are grown in traditional Sprouters.
The Snow Pea Shoots are rich,
dark green, with a fresh raw pea flavour. Highly nutritious and yummy,
they are deservedly getting more popular by the week. When grown, just cut
and rinse - they are super in salads or stir-fries.
Snow Pea Shoots are the plant above the soil. Snow Peas produce a robust, tender
shoot in 8 - 14 days (depending on your climate and the time of year).
They are really excellent stir-fried quickly with some garlic, tamari (soy sauce) and ginger.

Note: You can grow shoots from any pea variety. They all have different
characteristics, so why not try them all.
Snow Peas sprout quickly and with minimal effort. They taste great as 2 day
sprouts and are very popular with children. When the sprouts are left to grow for 4, 5, 6 or more days (depending on
your climatic conditions) they will form long roots on one end and Shoots on the other -
with the Pea in between.

The snow pea [Pisum sativum ssp. sativum convar. axiphium] is a legume,
in its mature state more specifically a variety of pea eaten whole in its pod while still
unripe. It is one of the earliest-known cultivated plants, with evidence of having been cultivated in a region that is now along the
Thailand-Burma border, 12,000 years ago.
It is speculated that the name comes from the whitish tint reflected from the pods.
As with all legumes, snow peas host beneficial bacteria, rhizobia, that fixes nitrogen in the soil -- this is called a mutualistic relationship
-- and are therefore a useful companion plant, especially useful to grow intercropped with green, leafy vegetables that benefit from high
nitrogen content in their soil.

Snow Pea Sprouts, also called Snow Pea Shoots, can be cooked gently by
steaming, adding at the end to soups and stir-fries or a quick saut้,
and can be eaten raw in salads or sushi. Considered a delicacy in Chinese cooking, they are quite tasty being described as a cross
between young spinach and snow peas. Like other sprouts, they are a
good source of Vitamins, Minerals, Amino Acids, Chlorophyll, and Protein.
Garlic Snow Pea Sprouts

Ingredients (serves 8)
* 2 tbs vegetable oil
* 5 garlic cloves, thinly sliced lengthways
* 3 small fresh red chillies, thinly sliced crossways
* 1 tbs sesame oil
* 300g snow pea sprouts
* 2 tbs rice vinegar (Amoy brand)
* Salt & freshly ground black pepper
Method
1. Heat oil in a wok over medium-high heat until smoking. Add garlic
and chilli and stir-fry for 1 minute or until garlic is crisp. Add the
sesame oil and stir-fry until hot.
2. Add sprouts and stir-fry for 2 minutes or until tender. Remove
from heat. Add vinegar. Taste and season with salt and pepper. Toss
until combined. Spoon onto a serving platter and serve immediately.

* You can make this dish 15 minutes before serving.
